This week (somewhere between emotional break down and mental sanity), I had time to make pumpkin spice cookies for my friends at work. These pumpkin cookies were SO good, I just had to share them with all of you.

PUMPKIN SPICE COOKIES WITH CREAM CHEESE FROSTING
Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/2 teaspoon salt (I prefer Kosher)
- 1/2 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 cup canned pumpkin puree
- 1 egg
- 2 teaspoons vanilla extract
- 2-3 cups confectioners’ sugar
- 1/2 cup unsalted butter, softened
- 8 0z. Cream Cheese, room temperature
- 1/2 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C). Combine flour, baking powder, baking soda, cinnamon, nutmeg, allspice, and salt; set aside.
- In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg, and 2 teaspoons vanilla to butter mixture, and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
- Bake for 15-18 minutes in the preheated oven. Cool cookies, then cover with cream cheese frosting
- To Make frosting: Combine cream cheese, butter and vanilla - beat until smooth. Slowly add confectioners’ sugar to desired sweetness (i.e. if you want your frosting to be on the sweeter side, use 3 cups of sugar).
Recipe makes about 24 cookies.

jen sherwood - If you are really in a hurry and don’t have much time, but want to make these yummy cookies all you need is a spice cake mix and a can of pumpkin. That’s it! I frosted them and took them to work a few weeks ago and everyone loved them!!
