Dallan’s birthday was last week and I completely forgot about it. Fortunately, my mom mentioned it to me (the day after his birthday) or it probably would have continued to go unnoticed. In my defense, I had woken up in a panic the day of his birthday and quickly rushed out the door to the airport. Luckily, I gave him his gift three weeks early so at least I got that part right.

In an attempt to make up for my mistakes, I’ve been baking and cooking up a storm. One of the recipes he requested was this cookie recipe. He claims that these are his favorite cookies now and I’m not complaining (they use a cake mix and are super easy). Give this recipe a try, I promise you won’t regret it!
Ingredients:
1 (8 oz) brick of cream cheese, room temperature
1 stick of butter, room temperature
1 egg
1 teaspoon vanilla extract
1 box chocolate cake mix of your choosing
1-2 cups powdered sugar
Directions:
In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Beat in the vanilla extract. Beat in the cake mix. Cover and refrigerate for 30-60 minutes or until they firm up. Roll the chilled batter into tablespoon sized balls and then roll them in powdered sugar. Place on an un-greased cookie sheet 2 inches apart. Bake 10-12 minutes at 350 degrees. The cookies will remain soft and gooey. Cool completely and then sprinkle again with powdered sugar, if desired.
